From the very first mouthful, it’s clear that Sylvain Sendra has a unique vision: to transform simple products into gustatory treasures. The meal opens with creations that amaze as much for their flavours as for their textures, like one of the starters of the moment, a revisitation of pasta carbonara – a nod to the chef’s grandmother – that surprises with its lightness. Presented as an airy mousse, it reveals creamy, smoky flavours, while remaining balanced.

The chef also demonstrates his talent in mastering vegetables with his signature dish: a cauliflower worked in two ways, accompanied by a drizzle of Madagascar vanilla-infused olive oil. This daring combination baffles the taste buds and is almost reminiscent of a dessert, such is the sweetness and refinement of the flavours.

Fleur de pavé sources its daily produce from Asafumi Yamashita, a Japanese market gardener who grows his vegetables in the Yvelines and supplies some of the capital’s top chefs, such as Pierre Gagnaire, with exceptional vegetables.

The culinary journey continues with fish cooked to perfection, accompanied by soft gnocchi and delicately creamy mashed potatoes. Each element of the dish is meticulously crafted, offering a perfect harmony between tradition and modernity.

A light finish: the meal concludes on a fruity and elegant note, with a dessert that is both gourmand and light. The fruit is sublimated in a composition that blends freshness and creativity, perfect to end the meal.

Starred elegance at affordable prices

What sets Fleur de Pavé apart from other Michelin-starred restaurants in Paris, beyond the quality of its dishes, is its value for money. Sylvain Sendra offers cuisine of great finesse at affordable prices, making gastronomic excellence more democratic. The 4-course tasting menus (two starters, a main course and a dessert) cost just €62 for lunch and €75 for dinner.

A star that shines in simplicity

At Fleur de Pavé, there’s no unnecessary fuss. The restaurant is small but elegant, with warm, attentive service. You can also reserve a place at the counter to watch the show being put on in the kitchen.
